Viennoiserie Production
Overview
The Viennoiserie Production team member plays a key role in our commissary kitchen, crafting high-quality laminated and enriched dough pastries for our café locations, catering operations, and wholesale clients. This position involves hands-on production of a variety of viennoiserie items, including croissants, danishes, and specialty creations, using traditional techniques and premium ingredients. Working within a collaborative team, all Viennoiserie Production team members are responsible for maintaining the highest standards of craftsmanship, efficiency, and consistency.
This is a dynamic role in a high-volume production environment, requiring attention to detail, excellent time management, and a commitment to delivering exceptional results. Those in the Viennoiserie Production role will also contribute to maintaining an organized, clean, and efficient kitchen workspace.
Key Responsibilities
- Lamination and Dough Preparation: Prepare and laminate dough for croissants, Danishes, and other viennoiserie items, maintaining precise layer counts and consistency.
- Shaping and Baking: Portion, shape, and proof viennoiserie products with an emphasis on uniformity and detail.
- Recipe Execution: Follow established recipes and production schedules while maintaining strict quality standards.
- Quality Control: Ensure all products meet visual, textural, and flavor expectations before packaging or distribution.
- Equipment Operation: Safely operate and maintain tools and machinery, such as sheeters, mixers, and ovens.
- Production Efficiency: Work effectively to meet daily production targets set forth by the Viennoiserie Lead or Pastry Sous Chef.
- Inventory Management: Monitor and report ingredient levels to the ordering manager to ensure uninterrupted production.
- Hygiene and Organization: Maintain a clean, organized, and food-safe work environment in compliance with health and safety regulations.
- Team Collaboration: Communicate effectively with the kitchen team to ensure seamless workflow and timely delivery.
Qualifications
- 1-3+ years of professional experience in viennoiserie production, with understanding and expertise in lamination techniques.
- Strong understanding of dough development, fermentation, and production in a commercial setting.
- Ability to work efficiently in a fast-paced, high-volume environment without compromising quality.
- Exceptional attention to detail and consistency in shaping and finishing products.
- Flexibility to work early mornings, evenings, weekends, and holidays as production demands.
- Effective communication and collaboration skills to work with cross-functional teams.
- Physical ability to lift up to 50 pounds, stand for extended periods, and perform repetitive tasks.
